(Healthy) Greek Chicken Salad

  • 3 Cups Chopped Cooked Chicken
  • 1 Cup Diced Seeded & Peeled Cucumber
  • 1/2 Cup of Feta Cheese
  • 1/4 Cup Chopped Parsley 
  • 2 Tablespoons Sliced, Pitted Kalamata Olives
  • 3/4 Cup Plain Fat-Free Yogurt
  • 1/2 Cup of Mayonnaise
  • 3 Cloves Garlic (Minced)
  • 1 Tablespoon Dried Oregano (or Marjoram... Whichever One You have will Work)

Step 1: Make the dressing by stirring together the minced garlic, oregano (or marjoram), mayonnaise, and yogurt. Cover and stick it in the refrigerator for later.

Step 2: Chop up the cucumber, parsley, and olives... all the veggies in a bowl. (And add more chopped olives if you're a fan like me.)

Step 3: Crumble the feta cheese in with the veggies and combine. Proceed to then ignore the ingredient list and crumble in even more feta (again, I'm a fan).

Step 4: Chop or shred the cooked chicken (or do both because you don't care whether half is shredded and half is chopped like me) and combine with the veggies and cheese.

Step 5: Go get the chilled dressing then pour into the chicken salad, and mix it all together so that everything is covered in the yummy Greek dressing.

Viola! You have easy, amazing, delicious Greek chicken salad!
If you're cool, stuff the salad in pitas, or if you're average like me and you don't buy pita bread, use whatever artisan bread you have, then immediately begin eating it without taking a picture of the final sandwich as I did. FYI, this recipe feeds about 6 people, or if you're single, more than likely you've got lunch for the week covered (but be sure to stick it in the fridge covered... gotta add that in for the guys out there).
